There is a beautifully re-finished dash from a Series 63 that I found thats for sale... I have a Series 62 model.  Can anyone varify if the two are interchangeable?  Thanks!

No, they are not interchangeable. The dash that you describe will fit a 61,63, or 67 for 1941. The dash for the 62 is the same as the 75. The 60S has the most unique dash stamping for that year, as the steering column passes through the panel.
