Inches if you want torque from gas.   If you want real torque, go diesel(2X).   
500 came from the "low compression blues" era.   The rotating mass and surfaces are stealers at top line rpm.   Why it was reduced over the years.   Same argument why the V-12 & 16 went passe, plus those had the crank dynamics issues.   Big, low, and slow.   Small, nimble, and quick.   Words to race by.

I would think that depends upon who builds it.  With the exception of the heads (mine are CNC ported iron heads of roughly the same flow rate) I've got the same "parts" in mine.  Aside from machine shop work I've got somewhere just north of $9,500.00 in mine.
If you are real curious I suggest you call Paul at (I can't quit calling them MTS) at MTS and I'm sure he has a number.
