Hopefully this'll make some sense!
I've got a '55 Eldorado running the original twin Rochester carbs and batwing. The car runs lovely under load and lovely at idle but when she's been idling and I depress the throttle, it feels for a moment like she's going to cut out until I use a lot more throttle. There's no progression there with a light throttle, it's all or nothing. That almost cutting out doesn't feel normal. Any ideas what it might be and how I can improve that initial throttle response\finesse?

It seems to me that 1955 Eldos have twin Rochester carbs; 1956 Eldos had Carter carbs. This will of course not solve the issue you have!
Check if the eccelerator pumps are working: start the engine until warm enough that the chokes are open, then, with engine off, remove the air cleaner to have a good view at the carbs. By opening the throttle vavles, you should see 2 fuel jets at each carbs. If no fuel coming at one or both carbs, its time to replace the accelerator pumps.
If you have fuel at both carbs, obviously there is another issue.
