Where in the service manual do they describe vacuum lines and/or ports? I'm looking for vacuum line sizes, like from the intake manifold to the firewall mounted vacuum manifold (which I also cannot find), and the various other vacuum lines I need to check for leaks, and/or replace, and the correct routing of said lines...but I look under "V" in the glossary, no vacuum??? And yet vacuum is such an import part of keeping everything running! Did they call it something else back in 68?

Each part that uses a Vacuum source to work, has its' description in the relevant pages of the Shop Manual, or Service Manual.

The Heating and Air Conditioning Vacuum operation is mentioned in the Heating and AC Section.   The Auto Park Brake Release is in the Brakes Section, and the Engine Vacuum is in the Engine Section, Tuning Section etc. etc.

The Vacuum operated trunk release would be n the Body Service Manual.

Remember that the Shop Manuals and Body Service Manuals were printed for the Mechanics to use, not Joe Blow.

It's typical to match the hose size with what is on it, but if yours doesn't have any you'll have to compare by the barb size.  Tubing is sized by ID.  So whatever the barb is the ID.  1/8", 5/16,1/4, etc.  Later are metric.
They typically didn't list vacuum routings/sizes, sometimes you can find a diagram someone made online.
There maybe some info in the parts list by part for the hose.  eg: manifold.  Brake booster, etc.  It'll give you a number for reference or size and they list in the common parts sections.
