Any tips for removing door panels for restoration - 68 Coupe DeVille

I'm going to have Just Dashes refurbish my door panels.  Any tips on removing them without causing any damage?  Also, their lead time is 5-6 months, so I'm going to be without them for that time period.  I assume I'll still be able to access the inside door latch (to get out) and can plug the windows switches in so I can operate the windows.

How hard is it to remove the rear quarter panels?  Those were spray painted a color that isn't going to match the correct vinyl, so I guess my choices are to either have them redone as well, or have them re-sprayed the correct color.
