I'm fairly sure they used 195 degree stat so ideally you should see temps hanging right around 200.

This is an engine you don't what to get hot.  Lots of stories back in the day where 'the temp light came on and I made it to (home - work - the service station)' and the next line was got a new engine or new car.

That is pretty much true for most engines by the 90's.   70's and older all cast iron engines could usually take getting good an hot a couple times without serious damage but when they started with aluminum and mixing metals getting them really hot more often then not leads to significant damage. Another way Cadillac was ahead of their time I guess.
73 Eldo convert w/FiTech EFI, over 30 years of ownership and counting
Somewhat recently deceased daily drivers, 80 Eldo Diesel & 90 CDV
And other assorted stuff I keep buying for some reason
